It is high summer and our peach trees are in full swing! Sandy from our Solar team has an organic orchard with about 40 peach trees and when they get kissed by the sun they all ripen at once. With so much bounty she comes up with creative ways to make everything with peaches.
This weekend Sandy made a peach sauce. All you do is either soak ripe peaches in a 5 gallon bucket until soft, peel and pit and cut into small pieces. Boil for about 30 minutes and add 1 cup of Maple Syrup and 1 teaspoon of Nutmeg and after its thickened and cooled place them in jars. So yummy!
The other fun idea is to use solar power and make peach leather! Pit and peel peaches and puree in a blender, then take the puree and pour on top of a piece of parchment paper. Place another piece of parchment paper over the top and just let it dry in the sunshine for a day. Once dry, the peach leather is ready to eat. Kids love it!
Of course, peach pie, peach cobbler, and grilled peaches are other great uses or freeze them and use for smoothies or have a fresh bounty in the winter.
